Oh wow, it sure has been a while! Nikki and I visited this restaurant roughly 15 months ago, back when she was full-term pregnant and wanted to visit the Washington state capital prior to the arrival of our little guy. Turns out, he arrived around 1 week later! I've been meaning to finish this article, but it also turns out that newborn babies will keep you pretty dang busy. :)

Anyways, the restaurant itself was pleasant, but the thing I remember most was our waiter being phenomenal. When I asked him which cheeses were in their Mac and Cheese sauce, he ran back into the kitchen and returned with the full list on paper. (By the way, their sauce is made with white queso, cream cheese, American, cheddar, and Monterey Jack cheeses.) When we mentioned to him that we were fans of hot sauces, he again rushed into the back, and brought us a bottle of some extra-spicy hot sauce that the chefs kept for themselves. We ordered their Mac and Cheese with chopped brisket on top, and I remember the Mac being okay on its own, but mixed with their brisket, it was fantastic! The star of the show was truly the BBQ here, the Mac and Cheese was secondary, but I still enjoyed the meal. Plus, we ordered a giant tray of their Totchos, and they were a fantastically sloppy and delicious mess!

So yeah, I enjoyed this place quite a bit. It might be a short while until we can get out-of-state for another Mac and Cheese. But we will. The little fella does seem to enjoy his Mac and Cheese, just like Mom and Dad. :)
